Macaroni and Eggplant Ratatouille
Adding macaroni to ratatouille is a clever way to liven up this classic Mediterranean stew.

2 ½ quarts water
1 cup elbow macaroni
2 tablespoons dry red wine
1 tablespoon canola oil
1 medium yellow onion, diced
1 green bell pepper, seeded and diced
8 ounces white mushrooms, sliced
2 cups diced eggplant
3 or 4 cloves garlic, minced
1 can (28 ounces) plum or stewed tomatoes
1 can (15 ounces) red kidney beans, drained
2 teaspoons dried oregano
1 teaspoon dried basil
½ teaspoon black pepper
½ teaspoon salt
